Phenolic Off-Flavours – Beer on the Brain
Every year I teach two lectures on yeast metabolism in commercial brewing. Poor students have to listen to me ramble on for two hours about beer. They get aroma samples as examples of some of the things I discuss – esters, POF, biotransformation – but I keep the bigger samples for myself. This year, instead of hording these to myself, I’m “sharing” them with you through a short video series that compares the samples I prepared, and which discusses the brewing science they reflect.
