Ale Versus Lager Yeasts – Beer on the Brain

Every year I teach two lectures on yeast metabolism in commercial brewing. Poor students have to listen to me ramble on for two hours about beer*. They get aroma samples as examples of some of the things I discuss – esters, POF, biotransformation – but I keep the bigger samples for myself.

Those of you who follow me on Instagram may have seen my post (copied below) about this – and the suggestion that I turn some of that material into some videos. I like this idea, so here is the first (of 5) videos comparing the samples I prepared and discussing the brewing science they reflect.
