a Taste&#8230;"},"content":{"rendered":"<p>Normally, when allowing bottled beer to\u00a0naturally carbonate, you need to let them sit for 3 weeks to reach full carbonation and to allow the yeast to settle (otherwise, the beer can have a nasty yeast &#8216;bite&#8217; to it). \u00a0But, despite bottling less than 2 weeks ago, I couldn&#8217;t wait any longer and had to imbibe in a bottle of my <a href=\"https:\/\/suigenerisbrewing.com\/index.php\/2012\/06\/21\/labelize-the-brew\/\">Parallax<\/a> <a href=\"https:\/\/suigenerisbrewing.com\/index.php\/2012\/06\/25\/bottling-the-parallax\/\">Pale<\/a> Ale.<\/p>\n<p>It was good &#8211; really, really good. \u00a0Some notes, pics, and the recipe, below the fold&#8230;<\/p>\n<p><a name=\"more\"><\/a><b>Tasting Notes:<\/b><\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"clear: right; float: right; margin-bottom: 1em; margin-left: 1em;\" href=\"https:\/\/i0.wp.com\/1.bp.blogspot.com\/-kCHdhFwSl_8\/T_WUZdn5ItI\/AAAAAAAAAIw\/l3BMfQgdjmo\/s1600\/parallax02.png\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/1.bp.blogspot.com\/-kCHdhFwSl_8\/T_WUZdn5ItI\/AAAAAAAAAIw\/l3BMfQgdjmo\/s320\/parallax02.png?resize=240%2C320&#038;ssl=1\" width=\"240\" height=\"320\" border=\"0\" \/><\/a><\/div>\n<p>Despite being bottle-conditioned, the beer was quite clear, almost totally lacking in chill-haze. \u00a0When poured, it was reasonably carbonated (although it should carb some more over the next 1.5 weeks), the yeast stayed mostly settled in the bottle, and the beer formed a nice head. \u00a0However, the head readily\u00a0dissipated (pic to the right).<\/p>\n<p>While the head retention was not as good as expected, this may simply be an issue of it not being fully aged, being under-carbonated, or due to a less-than-clean glass.<\/p>\n<p>The beer itself was unexpectedly dark &#8211; the recipe predicts a colour of 9 SRM (slightly darker than your average bud\/coors\/molson), and instead I ended up with ~17 SRM. \u00a0That doesn&#8217;t bother me any, although I&#8217;m unclear as to why it happened.<\/p>\n<p><a style=\"clear: left; float: left; margin-bottom: 1em; margin-right: 1em;\" href=\"https:\/\/i0.wp.com\/3.bp.blogspot.com\/-gHQ7LTQwutE\/T_WbMEAEcXI\/AAAAAAAAAI8\/zqKyW7q7N8Y\/s1600\/parallax01.png\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/3.bp.blogspot.com\/-gHQ7LTQwutE\/T_WbMEAEcXI\/AAAAAAAAAI8\/zqKyW7q7N8Y\/s320\/parallax01.png?resize=240%2C320&#038;ssl=1\" width=\"240\" height=\"320\" border=\"0\" \/><\/a>Of course, none of the above really matters &#8211; how it tastes is all that\u00a0truly\u00a0matters. \u00a0The smell of the cascade hops came through clearly, and as expected with a 50\u00a0<a href=\"http:\/\/en.wikipedia.org\/wiki\/Beer_measurement#By_bitterness\">IBU<\/a> beer, there was a strong, but not\u00a0overpowering, hop-bitterness to the beer. \u00a0Often, at such a young &#8216;age&#8217; this kind of bitterness can be harsh, but much to my\u00a0delight, it was already smooth and pleasant. \u00a0As expected, the beer was low-body with only modest maltyness, and a touch of sweetness, making it ideal for\u00a0today&#8217;s\u00a040C temperatures.<\/p>\n<p>Strongly hopped beers typically age well; becoming smoother and mellower with age. \u00a0Given how good
