{"id":698,"date":"2012-09-29T17:26:00","date_gmt":"2012-09-29T17:26:00","guid":{"rendered":"http:\/\/suigenerisbrewing.com\/index.php\/2012\/09\/29\/crepuscular-porter\/"},"modified":"2017-09-15T17:32:32","modified_gmt":"2017-09-15T17:32:32","slug":"crepuscular-porter","status":"publish","type":"post","link":"https:\/\/suigenerisbrewing.com\/index.php\/2012\/09\/29\/crepuscular-porter\/","title":{"rendered":"Crepuscular Porter"},"content":{"rendered":"<p>Fall is here &#8211; time to do away with the lighter summer beers and start brewing rich, dark, beers that warm the soul on cold winters nights. \u00a0Dark beers &#8211; browns, porters, stouts, olde ales &amp; Scottish exports\u00a0&#8211; are\u00a0among\u00a0my\u00a0favourite\u00a0beers. \u00a0Of these, porters top the list.<\/p>\n<p>Porters are not a commonly encountered\u00a0style\u00a0&#8211; at least, not here in Canada. \u00a0It is too bad &#8211; aside from being important\u00a0historically, porters stand as one of the most diverse styles of beer out there. \u00a0On one extreme porters are medium-brown in colour, differing from brown ales in their extra hoppiness. \u00a0On the other extreme are dark porters &#8211; would-be stouts but for a bit more dark malt bitterness. \u00a0Between those two extremes is a huge range of beers &#8211; sweet to dry, mild to hoppy, some with toasty\u00a0nuttiness, others with the coffee-like flavour of roasted malts. \u00a0Swap out the ale yeast, substitute a lager yeast and lager fermentation conditions, and you get a baltic porter &#8211; every bit as diverse as the ale version, but with the mellower nature of a larger replacing the flamboyance of ale yeasts. \u00a0For the brave soul, one can take a sweet porter, subtract the hops, add in some\/all of vanilla, wintergreen, licorice root, sarsaparilla root, nutmeg, anise, molasses, cinnamon, clove, or honey &#8211; and you have a real rootbeer. \u00a0Alcoholic, richly flavoured, sweet and spicy. \u00a0Its the great-grandpa of the soda enjoyed by so many.<\/p>\n<p>Today&#8217;s\u00a0brew is a middle-of-the-road Porter. \u00a0Crepuscular Porter is named after crepuscular animals &#8211; animals active at\u00a0twilight\u00a0and at the dawn. \u00a0Accordingly, this beer lacks the midnight blackness of darker porters and stouts, bearing a medium-brown colour (30SRM). \u00a0With a hoppiness on the higher-end for the style (32IBU), 5% alcohol, and with a rich nuttiness imparted by a rarer adjunct grain &#8211; pale chocolate malt &#8211; this beer will be a nice brew to enjoy while racking leaves or while warming up after a\u00a0chilly\u00a0bike ride home from work.<\/p>\n<p>More Below the Fold&#8230;<\/p>\n<p><a name=\"more\"><\/a>This brews signature\u00a0ingredient\u00a0is pale chocolate malt &#8211; unlike classical chocolate malt, it&#8217;s not as dark (300SRM instead of the usual 350-400), nuttier, and has less of a roasted character. \u00a0This grain should \u00a0provide this beer with a mellow nuttiness, well balanced with a bit of sweetness and a counterbalancing bitterness.
