{"id":674,"date":"2013-01-04T18:36:00","date_gmt":"2013-01-04T18:36:00","guid":{"rendered":"http:\/\/suigenerisbrewing.com\/index.php\/2013\/01\/04\/brewing-lagers-without-lagering\/"},"modified":"2017-09-15T17:06:16","modified_gmt":"2017-09-15T17:06:16","slug":"brewing-lagers-without-lagering","status":"publish","type":"post","link":"https:\/\/suigenerisbrewing.com\/index.php\/2013\/01\/04\/brewing-lagers-without-lagering\/","title":{"rendered":"Brewing Lagers without Lagering"},"content":{"rendered":"<p>This video, from <a href=\"http:\/\/www.youtube.com\/user\/BrewingTV\">Brewing TV<\/a>, covers a topic of interest to many brewers &#8211; how to get a clean, crisp lager beer without the need for lagering equipment (i.e. dedicated fridge + temperature controller). \u00a0This video covers <u>three<\/u> methods on how to do this.<\/p>\n<p><iframe loading=\"lazy\" src=\"http:\/\/www.youtube.com\/embed\/zluCEyQtQ0A\" width=\"560\" height=\"315\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<p>Methods &amp; results are summarized below the fold&#8230;<br \/>\n<a name=\"more\"><\/a><b><\/b><\/p>\n<hr \/>\n<p><b><u>Methods:<\/u><\/b><br \/>\n<b><i>Method 1:<\/i><\/b><br \/>\nBrew with a clean ale yeast, at cooler temperatures (15-18C). \u00a0The guys at BrewingTV used 2 packs of US-05 dry yeast into 5 US gallons, which is known for its low diacetyl and dry finish. \u00a0They brewed as cool as they could (66F\/19C).<\/p>\n<p><b><i>Method 2:<\/i><\/b><br \/>\nUse lager yeasts at ale temperatures. \u00a0Some will actually produce nice beers, despite being above their ideal temperatures. \u00a0Wyeast 2124 (Bohemian Lager) is recommended by Wyeast for this purpose. \u00a0The guys at BrewingTV used a starter to get their yeast numbers up, and\u00a0fermented as cool as they could (66F\/19C).<\/p>\n<p><b><i>Method 3:<\/i><\/b><br \/>\nUse ambient temperatures. This means you brew in fall\/winter, at a time when average temperatures should be in the lagering range. Temperatures will fluctuate more than you&#8217;d normally want, but it can work. The guys at BrewingTV used a cold,\u00a0uninsulated\u00a0closet that was at 15C\/59F and California common yeast. \u00a0You could use a garage, or insulated box outside, if you lack a cold room\/closet. Canucks like myself need to approach this method carefully &#8211; our night-time &amp; winter temperatures could easily turn the ferment into a beer-cube!<\/p>\n<hr \/>\n<p><b><u>Results:<\/u><\/b><br \/>\n<b><i>Method 1:<\/i><\/b><br \/>\n66-68F fermentation, 5 weeks in primary (temps dropped to 62F by end). \u00a0Some fruitiness, rye flavours.<\/p>\n<p><b><i>Method 2:<\/i><\/b><br \/>\nSide-by-side with method 1 for fermentation (split batch). \u00a0Was very clean, cleaner than US-05 (method 1). \u00a0But of a\u00a0sulphur\u00a0edge, but otherwise clean.<\/p>\n<p><b><i>Method 3:<\/i><\/b><br \/>\nFermentation was @ 58-60F, 2 weeks primary and 2 weeks in secondary. Beer was clean, but didn&#8217;t ferment completely.<\/p>\n<hr \/>\n<p><b><u>Final\u00a0thoughts:<\/u><\/b><br \/>\nThis is an interesting set of methods to try &#8211; and some that I will most\u00a0certainty\u00a0be exploring. My one concern is that the beers brewed by BrewingTV using these methods were stronger-tasting (bocks) compared to many styles of lagers. They had great success, but I&#8217;m not sure how well this method will work for lighter-bodied lagers.
