{"id":639,"date":"2013-06-17T23:09:00","date_gmt":"2013-06-17T23:09:00","guid":{"rendered":"http:\/\/suigenerisbrewing.com\/index.php\/2013\/06\/17\/tasting-notes-sour-mash-berliner-weiss\/"},"modified":"2017-09-15T18:48:15","modified_gmt":"2017-09-15T18:48:15","slug":"tasting-notes-sour-mash-berliner-weiss","status":"publish","type":"post","link":"https:\/\/suigenerisbrewing.com\/index.php\/2013\/06\/17\/tasting-notes-sour-mash-berliner-weiss\/","title":{"rendered":"Tasting Notes: Sour-Mash Berliner Weiss"},"content":{"rendered":"<table style=\"float: left; margin-right: 1em; text-align: left;\" cellspacing=\"0\" cellpadding=\"0\">\n<tbody>\n<tr>\n<td style=\"text-align: center;\"><a style=\"clear: left; margin-bottom: 1em; margin-left: auto; margin-right: auto;\" href=\"https:\/\/i0.wp.com\/4.bp.blogspot.com\/-doJuJ60WGn0\/Ub-SGEnrbZI\/AAAAAAAAAt8\/wxXPh6w7-iI\/s1600\/berlinerWeiss.png\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/4.bp.blogspot.com\/-doJuJ60WGn0\/Ub-SGEnrbZI\/AAAAAAAAAt8\/wxXPh6w7-iI\/s320\/berlinerWeiss.png?resize=210%2C320&#038;ssl=1\" width=\"210\" height=\"320\" border=\"0\" \/><\/a><\/td>\n<\/tr>\n<tr>\n<td style=\"text-align: center;\">A Bad pour that highlights the huge<br \/>\nhead of this beer.<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p>So its been a few weeks, and the <a href=\"https:\/\/suigenerisbrewing.com\/index.php\/2013\/06\/02\/easy-sour-sour-mash-berliner-weiss\/\">Berliner Weiss<\/a> is ready. \u00a0The beer started at 1.032 and ended at 1.006. \u00a0Nearly white in colour, with a wheat beer haziness, and a thick heavy head, this beer appears to be a conventional wheat beer. \u00a0That impression fades with the first whiff of the beers aroma &#8211; which is dominated by a sour lactic aroma, and only mild hits of hops and malt.<\/p>\n<p>This strangeness is enhanced when the brew is sipped. \u00a0A strong and slightly pungent lactic acid acidity dominates the beer, overlaying a mild maltiness &#8211; more sourness than any sour I&#8217;ve tried previously, but not unpleasantly so. \u00a0The hop flavour is subtle; detectable more because I was looking for it than any overt presence. \u00a0One of the odder aspects is the mouthfeel of the beer. \u00a0as suggested by the low OG, it is thin and dry. \u00a0But that is paralleled by an unusual carbonation &#8211; fine bubbles that nucleate on the tongue, tickling the mouth &#8211; bubbles more at home in a sparkling wine than in a beer.<\/p>\n<p>Overall I really like this beer &#8211; unbelievable refreshing, sour and tart. \u00a0A true summer treat &#8211; but one which is an acquired taste. \u00a0But, since this beer is normally served mixed, the taste test isn&#8217;t over yet<\/p>\n<p>Lacking both raspberry and woodruff syrup, I was limited to\u00a0<i>mit schuss<\/i> (sugar), mixing with another beer, and something uniquely Canadian &#8211; lets call it &#8216;<i>mit\u00a0Ahorn<\/i>&#8216; (with maple &#8211; AKA maple syrup).<\/p>\n<p><i>mit schuss:<\/i>\u00a0To serve this <i>mit schuss<\/i>\u00a0I made a simple syrup using equal parts table sugar (sucrose) and water. \u00a0This was heated in the microwave until the sugar was dissolved. \u00a0This was added bit-by-bit to see the effect. \u00a0At low doses this cuts the sourness without significantly altering the flavour profile. \u00a0At higher doses the sweetness begins to emerge, while the sourness fades ever more into the background. \u00a0All too soon the amount of sugar added was too much, producing an unbalanced sweet beverage with a mild malt flavour.<\/p>\n<p><i>Mixed with Beer:<\/i>\u00a0Traditionally, Berliner Weisse is mixed with a hoppy lager like pilsner. \u00a0I didn&#8217;t have anything like this on hand, but I did have my <a href=\"https:\/\/suigenerisbrewing.com\/index.php\/2013\/06\/10\/tasting-notes-johns-saison\/\">Saison<\/a>. \u00a0There is only one way to describe a 50:50 mix of the two WOW!!! \u00a0Yes &#8211; &#8216;wow&#8217;, in capital, with multiple explanation marks. \u00a0The grapefuit and vinous \u00a0notes of the saison blended with the lactic aroma went perfectly with the lactic acid aroma of the weisse, accenting the citrus nature of the saison. \u00a0This unexpected symbiosis worked at the flavour level as well &#8211; the acidity of the weisse balancing nicely with the fruity hop and yeast character of the saison. \u00a0Even the saison&#8217;s bitterness worked with the weisse, with the combined weiss sourness + fruit hop\/yeast flavours + bitterness producing an amazingly well balanced beer.<\/p>\n<p><i>mit Ahorn:<\/i>\u00a0 My maple syrup to weisse ratio was a little more on the maple side than ideal; none-the-less, the sweetness of the syrup cut the sourness of the beer significantly. \u00a0A bit of maple aroma can be detected, but the biggest difference is the taste. \u00a0The taste-forward sourness is gone; in its place was an overly-sweet malt flavour. Surprisingly, despite the over-use of the syrup, little maple flavour was detectable. \u00a0Given that the same effect can be reached <i>mit schuss<\/i>, I&#8217;d recommend against the maple.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A Bad pour that highlights the huge head of this beer.
