{"id":505,"date":"2016-12-16T13:45:00","date_gmt":"2016-12-16T13:45:00","guid":{"rendered":""},"modified":"2017-09-15T14:48:37","modified_gmt":"2017-09-15T14:48:37","slug":"tasting-notes-vinland-kveik","status":"publish","type":"post","link":"https:\/\/suigenerisbrewing.com\/index.php\/2016\/12\/16\/tasting-notes-vinland-kveik\/","title":{"rendered":"Tasting Notes &#8211; Vinland Kveik"},"content":{"rendered":"<table style=\"float: right; margin-left: 1em; text-align: right;\" cellspacing=\"0\" cellpadding=\"0\">\n<tbody>\n<tr>\n<td style=\"text-align: center;\"><a style=\"clear: right; margin-bottom: 1em; margin-left: auto; margin-right: auto;\" href=\"https:\/\/i0.wp.com\/3.bp.blogspot.com\/-cb39xE_-y1Q\/WFPsTOWJchI\/AAAAAAAABYE\/zvJPG7e_4eQRkRfap4bh6noFLmZzvrxPACLcB\/s1600\/vinlandkveik.png?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/3.bp.blogspot.com\/-cb39xE_-y1Q\/WFPsTOWJchI\/AAAAAAAABYE\/zvJPG7e_4eQRkRfap4bh6noFLmZzvrxPACLcB\/s320\/vinlandkveik.png?resize=156%2C320&#038;ssl=1\" width=\"156\" height=\"320\" border=\"0\" \/><\/a><\/td>\n<\/tr>\n<tr>\n<td style=\"text-align: center;\">Kveik in the Winter Sunset<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p>My <a href=\"https:\/\/suigenerisbrewing.com\/index.php\/2016\/11\/30\/kveik-its-advent-season\/\">last post on my blog<\/a> was the brewing of my advent beer for this year &#8211; a Norwegian-style Kveik, &#8220;reimagined&#8221; using ingredients that would have been available (minus the malt) to the Vikings who set foot in Canada over a thousand years ago.<\/p>\n<p>Last night was this beers &#8220;turn&#8221; in my <a href=\"http:\/\/www.londonbrewers.ca\/\" target=\"_blank\" rel=\"noopener\">brew-clubs<\/a>\u00a0annual advent exchange, so its time for some tasting notes.<\/p>\n<p><b>Appearance:<\/b>\u00a0Pours with an effervescent light copper body and a thick white head.<\/p>\n<p><b>Aroma:<\/b>\u00a0A spiciness that is hard to describe &#8211; vanilla, pepper, and a bit of a generic &#8220;spice&#8221;.<\/p>\n<p><b>Flavour:<\/b>\u00a0When young the beer had a notable orange ester character, alongside a spiciness that had discernible vanilla, pepsi and allspice-like notes. As it aged these flavours mellowed into a more generic spiciness (still good, but without the dominant &amp; discrete flavours) and a more subtle citrus-ish ester character. This spiciness was built on top of a malty backbone with a low-level hop bitterness. Balance is malt-forward. Aftertaste is a lingering malt sweetness and spiciness from the spruce.<\/p>\n<p><b>Mouthfeel:<\/b>\u00a0Moderate-to-high body, creamy and smooth, but highly effervescent. A lower level of carbonation would likely have been better for this style of beer.<\/p>\n<p><b>Overall:<\/b>\u00a0I really enjoyed this beer, both young and aged, but with a preference for the younger beer. When young, the beer had several flavour notes that stood out &#8211; vanilla, all-spice, and orange. Combined with the maltiness, these flavours created the ultimate Christmas beer with a character similar to that of a spice cookie. As the beer aged these distinct flavours blended to a more generic citrus &amp; spice character &#8211; still pleasant and nicely balanced, but without the distinct flavour notes of the younger beer. When (not if) I rebrew this beer I&#8217;m only going to make a few minor tweaks:<\/p>\n<ol>\n<li>I&#8217;m going to further enhance the orange character by pitching less yeast and fermenting a few degrees warmer (in the range or 39-42C)<\/li>\n<li>I&#8217;m not going to bother tracking down native north American hops (hop character was minimal and I doubt you&#8217;d notice much of a difference with any other hop being used)<\/li>\n<li>I&#8217;m going to keg it much younger &#8211;
